The roasted cauliflower with tahini sauce is a delicious and very simple recipe adapted from The Yoga Cookbook, Vegetarian Food for Body and Mind.
I love to make this dish at home as everyone loves it, even the kids! It is high in calcium, magnesium, heart-healthy fats and fiber. Feel free to add extra spices if you'd like a bit more zest. Enjoy!
Roasted Cauliflower In Tahini Sauce {Recipe}
INGREDIENTS:

Cook Time: 25 min
Roasted Cauliflower
1 head cauliflower, chopped into pieces
1/4 tsp turmeric
1/4 tsp garam masala (a combination of cumin, cardamom, cinnamon, cloves, coriander and black pepper)
1 Tbsp olive oil
sea salt to taste
2 Tbsp water
Tahini-Lemon Sauce
1 cup tahini (sesame paste)
1 cup filtered water
juice of one lemon/lime
sea salt to taste
red pepper flakes (optional)
DIRECTIONS:
Preheat oven to 350 F
Wash cauliflower florets well and add to a ramekin dish or a baking pan
Add spices, water and olive oil and make sure all florets are well coated in the spice mixture
Roast in the oven for 20-25 min or until golden and fragrant
To make tahini sauce, add all ingredients together in a blender or food processor and mix until smooth*
When cauliflower is roasted, take it out of the oven and let it cool for a few minutes.
Add tahini lemon sauce, mix well and serve immediately. Enjoy!
*Option to add extra herbs and lemon juice if desired.
